For a few years now, my family and I have been enjoying meals at a little dive called Tamales Diana in Mundelein, IL. As you can guess, a specialty of theirs is tamales as well as a full Mexican menu. As most Mexican restaurants, they serve chips and salsa at the beginning of every meal. The difference here from most is that their salsa is a green salsa that is made with avocado and it is absolutely delicious!
Last night, I tried to make it. Mine isn't quite the same (yet), but my first attempt turned out quite good.
1 Med. Tomato (would be better with Tomotillos)
1/4 Med. Onion
1/4 of one Jalapeno
2 T. Chopped Cilantro
1 Avocado
1 t. Salt
Juice of 1 Lime
Blend all ingredients in a food processor or blender and enjoy!
For supper, I made braised Pork cutlets with taco seasoning and sliced them up for tacos, red beans and rice and roasted green beans. Adding this salsa to the tacos was a fabulous combination! I will continue working out the green salsa recipe, but this first attempt is already a winner.
